“Drôo” is a sorghum pudding made from sorghum powder and milk. A popular dessert in Tunisia, it is mainly consumed in winter as it is better served hot. This is one of my favourite desserts because it’s healthy and it’s really delicious. My mom used to make it for the family back home in Tunisia.



8 tbsp of sorghum (Drôo)

1 liter of milk

6 tsp of sugar



  1. In a saucepan, put the sorghum powder and the sugar and mix well.
  2. Then add the cold milk and mix.
  3. Put on medium heat and let it cook while stirring constantly.
  4. Stir until the mixture starts to bubble.
  5. Add more sugar if you like.
  6. Pour into cups and decorate with dried fruits, dates, or Chamia.
  7. Serve hot or cold, depending on what you like. Personally, I prefer it hot.
